Birria has a deep, rich history in Mexico, dating back to the 1500’s! It is traditionally prepared with goat meat as a stew. The conquistadores thought it to be too tough with little flavor, so they gifted the “useless meat” to the indigenous people to help with the growing goat population. But if it’s one thing my people gonna do, it’s make delicious tacos out of nothing! 😉
Enjoy tender braised, spiced beef birria and lots of melty cheese, hugged by a flavorful tortilla. Accented perfectly with rich consommé, the freshness of cilantro and the tang of lime, as well as a side of Esquites- aka: Mexican Street corn! —
